Cholesterol is produced by the liver as needed to help absorb fats. However, some people produce more cholesterol than the body needs. This extra cholesterol is dumped into the bloodstream. Fiber is only one way of helping the body get rid of extra cholesterol. There are insoluble fiber and soluble fiber. When soluble fiber dissolves, it forms a gummy substance that traps dietary cholesterol, removing cholesterol from the body and slows the production of cholesterol in the liver. This is why fiber is so beneficial to the body.

Avoiding red meat helps reduce cholesterol. Beef can be a good source of protein, zinc, vitamin B-12, iron, magnesium, selenium and phosphorus, it is terribly high in saturated fat and cholesterol. According to the Harvard school of Public health:
- A 6-ounce Porterhouse steak can give you 38 grams of complete protein, but also 44 grams of fat and 16 of them the bad, saturated kind
- 6 ounces of salmon gives you 34 grams of protein and 18 grams of fat, and only 4 of them bad, saturated fat.
